D. Haven, Chair, called the meeting to order at 2:07 p.m. The minutes of the March 20, 2001 meeting
were approved as written.
Attendance Review: Dr. Sisley went over the attendance sheet with the board members. A motion was
made to excuse the absences of D. Haven, Bob Ard and Tom Watson. The motion was seconded and
approved.
E&CHP Report: Larry Jones, E&CH Manager Went over the food protection activity report for the
months of March and April with the board members.
Program: Ms. Martinez gave an overhead presentation on "Meat Safety Assurance". She indicated that
there are two types of inspections: 1) Custom Inspection and 2) Full Inspection. The Custom Inspection
allows only slaughter and processing of the customers own raised livestock and the end products are to
be returned to the customer. The Full Inspection follows the HACCP guidelines. The inspection checks
for salmonella standards, generic E coli (carcass,swabbing) and micro sampling for ready to eat products.
Under both inspections the Standard Sanitation Procedures are checked for compliance. Ms. Martinez
also informed the board that the State checks for proper labeling of meat products. They check the label
for product name, ingredients, net weight, name and address of establishment, the inspection legend and
the brand of inspection.
Old Business: Larry Jones mentioned that his department is almost finished updatingtheir database.
Mr. Jones will bring a sampleof the proposed certificate for food establishments doing a good job in
July. He indicated that this proposed certificate would be used for all food establishments.
D. Haven mentioned that the "Citizens for a Smoke-Free Environment Coalition"would like to meet with
the Restaurant Association to discuss an Adhoc Committee to work on the proposed smoking ordinance.
New Business: Larry Jones indicated that there are two bills awaiting approval and signature from the
Governor. The first bill addresses the charge for health permits in counties and the second bill would
require that there be food managers in counties.
Next Meeting: The next meeting will be held Tuesday, July 17, 2001 at 2:00 p.m. at the Corpus Christi-
Nueces County,Public Health District,..1702 Home Road, Administration Conference Room.
Adjournment: The meeting was adjourned at 2:50 p.m. SCANNED
