FOOD SERVICE ADVISORY COMMITEE
November 20, 2001

Members Present: D.W. Haven, Chair, Suzanne Gilliam, William Schroeder, Robert Ard
&Tom Watson
Members Absent: Gabriel Hernandez, Carlos Moreno
Staff Present: Nina M. Sisley, M.D., Roger Barker and Larry Jones
D.W. Haven, Chair, called the meeting to order at 2:13 p.m. The minutes of the September 18,
2001 meeting were approved as written.
Attendance Review: Dr. Sisley went over the'attendance sheet with the boardmembers. The
board moved to excuse the absence of Suzanne.Gilliam from the September 18, 2001 meeting.
All members are in good standing.,. Dr. Sisley informed the board members that Roger Barker has
accepted the position as Director for the San Patricio Health Department.
E&CHP Report: Larry Jones, E&CH Manager went over the food protection activity report for
the months of September and October with the board members. '
Program: Larry Jones spoke to the board regarding "How to Conduct a Foodbome Illness
Investigation". Larry distributed a Foodborne Disease Outbreak Manual from the Texas
Department of Health to all the board members present. The program outline consisted of: Passive
& Active Surveillance, Foodbome Illness Team, Procedures to Investigate, Sampling, Confirmed,
Attack Rate, Food Preparation & Contributing Factors.
Old Business: Larry Jones spoke to the board regarding issuing restaurants a "Superior Award".
This award would be issued to the top 10% of restaurants in the city for their superior ratings on
restaurant inspections. . Larry indicated that this "Superior Award" would be a restaurant's
recognition for a full year. The board discussed whether to include school kitchens into these
figures. Larry mentioned that school kitchensare operated differently than a restaurant and that
we could do an institutional category for schools to be included for a'"Superior Award". This
award wouldbegin in January 2002 and a letter will be sent.out to all restaurants explaining the
award. The board agreed that placementof the "Superior Award" and Health Permit in
restaurants needs to be visible to the public.
New Business: The board moved that the "Superior Award" be implemented. The motion was
seconded and approved.
Next Meeting: The next meeting will be held Tuesday, January 15, 2002 at 2:00 p.m. at the
Corpus Christi-Nueces County Public Health District, . 1702 Home Road, Administration
Conference Room.
Adjournment: The meeting was adjourned at 3:25 p.m.
