FOOD SERVICE ADVISORY COMMITEE
July 16, 2002

Carlos Moreno, Vice Chair, called the meeting to order at 2:15 p.m. The minutes of the May 28, 2002
meeting were approved as written with one correction as follows:
Under"discussion" section. "Tom Gabriel brought up the issue of smoking... should be changed to "Tom
Watson...." Same correction under"new business"i.e. Tom Watson.
Attendance Review: All members were present and in good standing.
E&CHP Report: Larry Jones, Environmental & Consumer Health Protection Manager, went over the
statistics for the months of May and June, 2002. Mr. Jones presented copies of an order regarding the
certification of food managers for the committee to review. A motion was presented to approve the order,
overall. The motion passed, with the exception of deleting section 2, #2 "child-care facilities" from the
exemption list. A motion was passed to change the wording under Section 1 to read; "One certified food
manager must be on site at all times in each permitted food establishment" instead of"must be employed
by".
Discussion: Suzanne Gilliam suggested that the committee re-open the discussion regarding the
certification of food managers. She suggested that Section 2, #4 "non-profit organizations" be deleted
from the exemptions list. The motion was presented to rescind the prior motion about exemptions. A
new motion was presented to delete#2 (childcare facilities) and#4 (non-profit organizations) from the list
of exempt food establishments under Section 2. The motion passed.
Program: Vikki Rickard gave a presentation concerning two new food-handling products.
1 . Smart System—a hands-free towel dispenser
2. CanPro can opener—no rough edges on the can, does not contact the food.
Old Business: None
New Business: Tom Watson called for an inspection of a new (Solis) restaurant that reportedly had water
condensation falling into the customers' food plates. Larry Jones agreed to send out an inspector.
Larry Jones presented D.W. Haven with an award for his years of service to the organization.
Next Meeting:. The next meeting will be held Tuesday, .September 17, 2002 at 2:15 p.m. in the
Administration Conference Room at the Corpus Christi-Nueces County Public Health District, 1702
Horne Road.
Adjournment: The meeting adjourned at 3:05 p.m.
