CALL TO ORDER: By Mr. Haven at 2 : 00 p .m. Regular meeting 'would have been on: '
10-16-91 , but Mr. Haven requested that it be postponed one week..due to Board
Members participation in "Taste of Corpus Christi" jthat date. Minutes.: ',
approved. .
ATTENDANCE REVIEW: John Otto has now missed. 3 meetings; he 'called prior to
this meeting to inform Board he had out-of=town commitment; he desires to
remain on Committee . MOTION APPROVED to excuse Mr. .Otto due to today's
meeting date being changed. Mr. Kuddes has missed . 2 meetings; he is ill .
MOTION APPROVED to excuse Mr. Kuddes due to illness . ' New member, Robert .Ard; : ,
was introduced.
DIRECTORS REPORT: Last week all inspectors. attended: a one day :. Food
Protection Seminar presented by (TDH) Texas Dept . of Health' s Food and Drug -.:-

Administration Division. The seminar covered ' interpretation of, state .food
inspection rules as adopted by • our ordinance. TDH staff recommended some
rule changes to the Board of Health. Approval..is expected ,to. change 'minimum
temperature'from 45 to 40 degrees for holding potentially hazardous foods , as.
well as a temperature change for eggs in a shell . Establishments that. serve
raw ' oysters . should post signs warning that eating raw oysters could be
harmful to some individuals . Dr . Sisley says :raw oysters have' always had
potential for harm, but more individuals now have 'compromised immune systems .,
One Sanitarian position is vacant at present , but should be 'filled :'soon.: . H
Inspectors district boundaries have been changed. There are now 8 districts'.. :
Inspectors have been rotated to different districts; ,,this is done every .'2•..
year, with the exception of inspectors who take care'tof temporary events- ..,. .:
(i . e. Bayfest) . A list,. of ' inspectors and their districts was handed out : - "
DISCUSSION: ' Mr. Haven says restaurant management students have raised funds
for over a year by making signs such as no smoking signs . They will 'be
considering the making of sign regarding oysters . •
Mr . Haven read an article from "Public Voice" about eating raw shellfish;
cholera was detected in the bay at Mobile, Alabama.
• A citizen inquired whether the Health Department inspects -food operations at
daycare centers . The answer is "Yes" . Centers ' wi.th more than 4 children_:':
must be licensed by 'the State . Questions were . raised . about dangers :of
teachers changing diapers and serving snacks .' ',
The Citizens Advisory Health Board will hold a 'Christmas luncheon on 12-18-91
at 11': 30 a.m. in the Health Department Auditorium, Advisory Committees are
being asked if they would like to contribute' toward the party.
MOTION APPROVED: To hold next meeting 1-15-92 ' as December is busy month for
food service establishments .
