FOOD SERVICE ADVISORY COMMITTEE
May 18, 1999 Meeting

Mr. Haven, Chair, called the meeting to order at 2:10 p.m. The minutes of the January 19, 1999
meeting were approved as written. Mr. Dolson and Mr. Thorman requested excused absences for
the January 19, 1999 meeting. Motion was made and unanimously passed by members present to
excuse the absences of above members.
Program: Overview of Foodbome Illness Remediation was presented by Steve Shepard, R.S.,
Supervisor, Environmental & Consumer Health Protection Division. Steve Shepard and several
other personnel from Environmental &. Consumer Health attended the Foodbome Illness
Remediation Conference in San Antonio, TX. Mr. Shepard mentioned that all reports are
investigated and passive surveillances are conducted. Teams are set up to do investigations when
cases are found. Mr. Haven recommended to the committee to review policies and procedures in
the event of a major outbreak. Dr. Sisley agreed that the Health Department is involved in the
preparation of an investigation plan. This plan would include step by step procedures in the event
of an outbreak to inform the restaurants, community and how to inform the media.
Environmental & Consumer Health Protection (E&CAP)Director's Report: Mr. McFarland
presented the Food Protection Activity Report for the first four months of 1999. He mentioned that
the State no longer separates Food Services and Retail Food Sanitation. It has now been combined
as one. .
The Food Service Advisory Committee Board has an At-Large vacancy. Names of any interested
persons are welcome. D. W. Haven mentioned that he would like to be reappointed when his term
expires.
Next Meeting: The next meeting will be held Tuesday, July 20, 1999 at 2:00 p.m. at the Corpus
Christi—Nueces County Public Health Department, 1702 Home Road, Administration Conference
